- 6 zucchini
- 2 teaspoons salt
- 3 tablespoons margarine
- 1 clove garlic, minced
- salt and black pepper to taste
- 1/4 cup grated Parmesan cheese

Cut the zucchini into long, thin strips by slicing it in a continuous motion with a sharp knife or using a spiralizer to create noodle-like strands.

Transfer the zucchini strips to a colander and sprinkle with 2 teaspoons of salt, allowing it to sit for 30 minutes to draw out excess moisture.

Next, fill a large pot with water and bring it to a rolling boil. Carefully add the zucchini strips to the boiling water, then cook for just 1 minute, or until they're slightly softened.

Immediately drain the zucchini and rinse it with cold water to stop the cooking process.

In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the zucchini strips and minced garlic to the skillet, stirring constantly as they cook until just tender, approximately 5 minutes.
