- 1/4 cup brown sugar

Heat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Prepare a baking vessel by coating it with non-stick spray and lining the 12-cup muffin pan with parchment paper.

Combine dry ingredients such as flour and sugar in a large container. Add baking powder, cinnamon, nutmeg, baking soda, and salt to the mixture and blend until well combined. Use a pastry blender or your fingers to incorporate shortening into the dry ingredients, resulting in a mixture that resembles coarse fragments.

Create a depression in the center of the bowl and pour in zucchini, milk, eggs, and vanilla extract. Mix all the ingredients together until they are well combined, then gently fold in chopped walnuts.

Spoon the batter into the prepared muffin cups, filling each 2/3 to 3/4 full. Sprinkle a small amount of brown sugar on top of each muffin.
