- 1 tablespoon olive oil
- 1 large zucchini, grated and squeezed dry
- salt and freshly ground black pepper to taste
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh dill
- 4 large eggs
- 4 ounces halloumi cheese, sliced

Heat a generous amount of olive oil in a compact, heat-resistant pan over medium warmth. Introduce sliced zucchini and a dash of salt to the pan, cooking until it reaches your desired level of tenderness, approximately 5 minutes. Introduce chopped mint and dill to the pan, cooking for an additional minute.

Combine eggs with salt and pepper in a small dish. Pour the egg mixture into the hot pan with the zucchini, stirring briefly to distribute the ingredients evenly. Allow the frittata to cook undisturbed, enabling the bottom layer to set firmly, around 2 minutes. Utilize a spatula to gently loosen the edges of the pan and prevent sticking as the bottom layer solidifies.

Position a rack approximately 6 inches away from the heat source and preheat the oven's heating element to broil.

Arrange slices of halloumi on top of the frittata as the edges start to set. Place the pan under the broiler until the top of the frittata is fully set and cheese is lightly caramelized, roughly 5 minutes. Serve immediately or at a comfortable room temperature.
