  • 1 1/2 pounds zucchini, cut into bite sized pieces
  • 1 (15.25 ounce) can whole kernel corn
  • 1 medium onion, sliced
  • 1 medium green bell pepper, coarsely chopped
  • 1 medium tomato, coarsely chopped
  • 1 tablespoon vegetable oil
  • 2 teaspoons white sugar
  • 1 1/2 pounds Monterey Jack cheese, cubed

Combine all the vegetables - zucchini, corn, onion, green pepper, and tomato - along with some vegetable oil in a saucepan with a lid.

Heat the mixture over medium temperature until the vegetables are soft and tender.

Next, add a small amount of sugar into the saucepan and gently mix it in.

Place shredded cheese on top of the mixture, but avoid stirring or mixing it yet. Cover the saucepan with its lid again.

Continue cooking the mixture over medium heat until the cheese on top is melted.

Now, gently stir in the remaining cheese and cover the saucepan once more.
