  • 1/3 cup diced jalapeno pepper
  • 1/3 cup chopped green onion
  • 1 clove garlic, crushed
  • 1 teaspoon chili powder, or to taste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon chipotle chile powder, or to taste
  • 1/2 teaspoon cayenne pepper, or to taste
  • 2 1/4 cups chicken stock
  • 1/2 cup tomato sauce

Heat the butter in a saucepan over a moderate heat setting. Combine the rice, jalapeno, green onion, and garlic in the melted butter, stirring constantly until the rice is evenly coated with the butter. Add the chili powder, cumin, salt, chipotle chile powder, and cayenne pepper; cook and stir until the mixture becomes fragrant, approximately 1 minute.

Add the chicken stock and tomato sauce to the rice mixture. Bring the mixture to a gentle boil, cover the saucepan, lower the heat to a low setting, and let it simmer for 20 minutes. Turn off the heat and allow the pot to remain covered on the burner for an additional 8 minutes. Remove the cover, and use a fork to gently fluff the rice.
