Ingredients
- 1 cucumber, diced
- 2 Roma tomatoes, diced
- 1/2 medium red onion, diced
- 2 serrano peppers, seeded and deveined
- 1/4 cup chopped cilantro
- 6 medium limes, divided
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoon ground black pepper to taste
- 1/2 pound raw shrimp, peeled and deveined
- 1 small avocado, diced
Instructions
1
Combine the refreshing ingredients of cucumber, tomatoes, red onion, serrano peppers, and fragrant cilantro in a bowl. Sprinkle 1 teaspoon of salt over the mixture and express the juice of 1 lime, carefully mixing it in. Set the initial blend aside momentarily.
2
Squeeze the remaining limes into another bowl, then add the remaining salt and pepper to taste.
3
Boil a 1- to 2-quart pot of water until it reaches a rolling boil. Carefully place the shrimp into the boiling water for 45 seconds, ensuring they are cooked through. Use a strainer to quickly remove the shrimp from the water.
4
Cut the partially cooked shrimp into small, bite-sized pieces and add them to the bowl with the seasoned lime mixture. Allow it to marinate for 20 minutes, infusing the flavors together.
5
Combine the marinated shrimp with the initial cucumber mixture and top it off with sliced avocados.
