  • 2 medium jalapeno peppers, cut in half lengthwise and seeded
  • 1/2 large green bell pepper, top and seeds removed
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 3/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • ground black pepper to taste

First, preheat your oven to 375 degrees Fahrenheit (or 190 degrees Celsius for those using metric measurements).

Next, prepare a baking sheet by lining it with parchment paper. This will help prevent the vegetables from sticking to the surface.

Then, arrange a variety of colorful vegetables - including green tomatoes, onions, jalapeño peppers, bell peppers, and garlic cloves - in a single layer on the prepared baking sheet.
