- 2 tablespoons kosher salt, divided
- 3 large lemons, zested and juiced
- 1/4 cup finely chopped flat-leaf parsley
- 2 tablespoons pickling spice
- 2 cloves garlic, finely chopped
- 1/2 teaspoon red pepper flakes
- 1 cup extra-virgin olive oil
- 3 large shallots, thinly sliced lengthwise

Fill a large container with ice-cold water to chill the ingredients.

Heat a substantial pot of water over high heat until it reaches its boiling point, then add the shrimp and 1 tablespoon of salt. Gradually decrease the heat to a low setting and cook until the shrimp turn pink, approximately 2 minutes. Remove the cooked shrimp from the pot with a slotted spoon and transfer them to the bowl of cold water, allowing them to cool down thoroughly, which can take anywhere from 3 to 5 minutes.

Remove the shrimp again and combine the remaining 1 tablespoon of salt, lemon peel and juice, parsley, pickling spice, garlic, and red pepper flakes in a separate bowl. Mix everything together until well combined to create the pickling oil.

Place the cooked shrimp in a resealable glass jar, alternating layers of shrimp and shallots. Pour the prepared pickling oil over the top, ensuring that all the ingredients are submerged. Secure the lid and refrigerate for 24 hours to allow the flavors to meld together.
