Zesty Persian Lamb Meatballs
Ingredients
  • 1 1/2 pounds ground lamb
  • 1/2 cup panko bread crumbs
  • 1/2 cup minced scallions
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon advieh
  • 2 teaspoons dried dill
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 eggs, lightly beaten
  • cooking spray
  • 2 tablespoons pomegranate molasses, or to taste

Combine lamb, bread crumbs, scallions, mint, and spices in a large bowl. Mix well with beaten eggs until the ingredients form a cohesive mass. Refrigerate for 30 minutes to allow flavors to meld together.

Prepare the oven by positioning a rack about 6 inches above the heat source and preheating it to the desired temperature.

Shape the lamb mixture into 1-inch balls. Arrange them on a baking sheet lined with parchment paper. Lightly spray the tops of the meatballs.

Place the meatballs under the broiler for 5 minutes, then rotate the baking sheet and continue to broil for an additional 3 minutes. Check the internal temperature of a meatball using an instant-read thermometer; it should reach at least 140 degrees F (60 degrees C).

Remove the meatballs from the oven and brush them immediately with a sweet and tangy glaze.
