Zesty Orange Chicken
Ingredients
  • 1 cup orange juice
  • 1/3 cup brown sugar
  • 1/3 cup rice vinegar
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger root, grated
  • 1 teaspoon crushed red pepper flakes
  • 2 pounds skinless, boneless chicken thighs, cut into chunks
  • 1 bunch green onions, sliced, white parts and tops separated
  • 4 cloves garlic, minced
  • 2 tablespoons grated orange zest
  • 1 red bell pepper, cut into 2 inch pieces
  • 1/2 cup sugar snap peas
  • 1 fresh jalapeno pepper, sliced into rings
  • 1 bunch cilantro leaves, for garnish
Instructions

Combine the juice of oranges, brown sugar, rice vinegar, fish sauce, soy sauce, grated ginger, and red pepper flakes in a large bowl.

Combine chicken pieces with the above mixture and mix well to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for 1 hour.

Transfer the chicken to a colander, allowing excess liquid to drain off. Reserve the marinade mixture.

Heat a large non-stick skillet over high heat and cook the chicken in it for 2 minutes, stirring constantly to prevent burning. Remove excess liquid by spooning it out.

Continue cooking the chicken until it develops a caramelized crust, taking about 6 to 7 minutes.

Add the white parts of green onions, minced garlic, and orange zest to the skillet. Cook for 2 to 3 minutes, stirring constantly.

Add half of the reserved marinade mixture and discard the remaining marinade. Simmer until the sauce thickens, taking about 3 to 4 minutes.

Add bell pepper, sugar snap peas, and a jalapeño pepper to the skillet. Cook until the vegetables are warmed through, about 2 minutes.

Add the green parts of green onions to the skillet and cook for an additional minute.

Turn off the heat. Garnish with cilantro before serving.
