Zesty Mexican Rice with Peppers
Ingredients
  • 1 tablespoon vegetable oil
  • 1 cup long grain white rice
  • 1 1/2 cups chicken broth
  • 1 tomato, seeded and chopped
  • 1/2 onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 fresh jalapeno pepper, chopped
  • 1/2 cup chopped fresh cilantro
  • 1 cube chicken bouillon
  • 1 clove garlic, halved
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste

Preheat a medium-sized saucepan over an intermediate temperature.

Add oil to the saucepan and let it heat up for a while.

Next, add rice to the saucepan and stir it around for 3 minutes.

Now, pour in chicken broth into the saucepan and bring the mixture to a rolling boil.

Add diced tomato, onion, bell pepper, and jalapeño into the saucepan.

Stir in chopped cilantro, bouillon cube, minced garlic, ground cumin, salt, and black pepper.

Bring the mixture to a boil again.
