Zesty Mexican Pork Chop Casserole
Ingredients
  • 1 tablespoon vegetable oil, or as needed
  • 6 pork chops
  • 1 teaspoon salt
  • 1 1/2 cups uncooked rice
  • 3 cups water
  • 1 (8 ounce) can tomato sauce, or more to taste
  • 1/2 (1 ounce) package taco seasoning mix
  • 1 red bell pepper, sliced into rings
  • 1 cup shredded Cheddar cheese, or to taste

Preheat your oven to the desired temperature of three fifty degrees Fahrenheit, or one seventy five degrees Celsius.

In a skillet, heat the oil over an elevated level of heat. Add pork chops to the skillet and cook them in batches if necessary, until they are nicely browned on both sides. This should take around five minutes.

Transfer the cooked pork chops to a nine by thirteen inch baking dish and sprinkle with salt. Arrange the rice around the pork chops in a layer.

In another bowl, combine water, tomato sauce, and taco seasoning. Pour this mixture over the pork chops and rice in the baking dish.

Cover the top of the baking dish with aluminum foil to prevent moisture from escaping during cooking. Place it in the preheated oven and let it cook for approximately one hour, or until the rice is tender and most of the liquid has been absorbed.

Remove the foil from the top of the baking dish. Add sliced bell pepper on top and sprinkle with Cheddar cheese. Continue to bake in the oven until the cheese is melted, which should take around fifteen minutes more.
