- 4 (10 inch) flour tortillas
- 1/2 cup salsa
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, chopped
- 2 roma (plum) tomatoes, diced
- 1/4 cup thinly sliced jalapeno pepper
- 1/4 cup sour cream

Preheat your oven to a medium-hot temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Apply a non-stick coating to two round baking dishes using cooking spray.

To prepare the filling, heat a skillet over an intermediate heat setting.

Combine ground beef, chopped onion, and minced garlic in the skillet and cook until the meat is uniformly browned and crumbly, taking around 5 to 7 minutes.

Drain the excess fat from the skillet and season the beef with a blend of spices, including chili powder, cumin, paprika, salt, and pepper.

Place a single tortilla in each of the prepared baking dishes, followed by a layer of refried beans.

Spread half of the seasoned ground beef over each tortilla, then cover with a second tortilla.
