Zesty Marinated Pork Tenderloin
Ingredients
  • 1/2 cup dry sherry
  • 1/2 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger root, minced
  • 2 1/2 pounds pork tenderloin
  • 1/8 teaspoon dry mustard powder, or to taste
  • 1/8 teaspoon dried thyme
  • 3/4 cup apple jelly
  • 2 tablespoons dry sherry
  • 1 tablespoon soy sauce
Instructions
1
Prepare the marinade by mixing together sherry, soy sauce, minced garlic, and grated ginger in a large glass baking dish.
2
Rub the pork tenderloin with mustard powder and thyme, then place it in the bowl with the marinade. Ensure the pork is evenly coated and cover the dish with a lid. Refrigerate for 8 hours or overnight to allow the flavors to meld.
3
When you're ready to cook, preheat your oven to 325 degrees F (165 degrees C). Remove the pork from the refrigerator and lift off its lid; leave the marinade in the dish to continue infusing the meat.
4
Bake the pork in the preheated oven, periodically basting it with the marinade to keep it moist and flavorful. Continue cooking until the pork reaches an internal temperature of 145 degrees F (63 degrees C), which should take around 60 to 65 minutes.
5
As the pork nears completion, prepare the sauce by heating apple jelly in a small saucepan over medium heat until it's warm and syrupy. Stir in sherry and soy sauce, then reduce the heat to low and simmer gently until the pork is cooked through.
6
Slice the pork tenderloin into thin strips and serve it warm, topped with a rich apple jelly sauce that's been infused with the flavors of sherry and soy sauce.
