- 2 tablespoons finely chopped red bell pepper

- 1/4 teaspoon ground black pepper
- 4 skinless, boneless chicken breast halves

In a bowl, merge lemon juice, olive oil, Dijon mustard, minced garlic, diced red bell pepper, salt, and black pepper. Set aside a quarter cup of the marinade for future use in basting. Place chicken breasts in the bowl and mix to coat evenly. Allow the mixture to sit for at least 20 minutes in the refrigerator.

Preheat your outdoor grill to high heat and lightly brush the metal grates with oil.

Remove chicken breasts from the marinade, allowing any excess to drip off; discard the remaining marinade in the bowl. Grill the chicken on the preheated grill until it reaches an internal temperature of at least 165 degrees Fahrenheit (or 74 degrees Celsius), flipping occasionally and basting with the reserved marinade.
