- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons crushed coriander seeds
- 1 teaspoon hot pepper sauce (such as Tabasco®)
- 1 teaspoon finely chopped chipotle pepper
- 1 teaspoon ground black pepper
- 1/2 teaspoon white sugar
- 2 pounds flank steak
- 2 tablespoons olive oil, or as needed

Combine the onion, soy sauce, lime juice, lemon juice, orange juice, cilantro, chili powder, garlic, cumin, oregano, coriander, hot sauce, chipotle pepper, black pepper, and sugar in a large 1-gallon plastic zip-top bag. Add the steak to the mixture and seal it securely.

Next, place the marinade bag in the refrigerator and give the contents a gentle stir every few hours to ensure even distribution of flavors. This process, known as massaging the meat, should be repeated for up to 24 hours to achieve optimal results.

Now, heat a generous amount of olive oil in a large frying pan over extremely high heat. Carefully add the steak and marinade to the pan, taking care not to splash any of the hot oil.

Cook the steak for 4 to 5 minutes per side, or until it reaches your desired level of doneness. To check the internal temperature, insert an instant-read thermometer into the thickest part of the steak and verify that it reads between 130 to 140 degrees F (54 to 60 degrees C).
