Zesty Beet Greens

  • 1 tablespoon extra-virgin olive oil, or to taste
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • salt and freshly ground black pepper to taste
  • 2 lemons, quartered

Boil a large pot of water that has been lightly seasoned with salt until it reaches a rolling boil.

Add the beet greens to the boiling water and continue cooking, leaving them uncovered, until they become tender and soft, approximately 2 minutes later.

Drain the greens in a colander to remove excess water and immediately submerge them in an ice bath for several minutes to halt the cooking process.

Once the greens have cooled down, carefully pour out any remaining water and coarsely chop them into smaller pieces.

Heat a generous amount of olive oil in a large skillet over medium heat.

Mix minced garlic with red pepper flakes and cook, stirring constantly, until the aroma is released and the mixture becomes fragrant, roughly 1 minute.

Mix in the chopped greens until they are evenly coated with the garlic and pepper mixture, then add a pinch of salt and pepper to taste.

Continue cooking the greens over medium heat until they are just hot, approximately 1 to 2 minutes.
