  • 1 large clove garlic, minced
  • 1 teaspoon rice vinegar, or to taste
  • 1 teaspoon sesame oil
  • salt and ground black pepper to taste
  • 8 leaves cabbage
  • 1/2 cup matchstick-cut carrots
  • 3 green onions, thinly sliced
  • 8 sprigs cilantro, or to taste
  • 1 pinch sesame seeds
  • 1 pinch red pepper flakes

Preheat the skillet by placing it over medium-high heat. Sear ground beef in the hot skillet, fragmenting any large clumps into smaller pieces, until it reaches a rich brown color and becomes crumbly, approximately 5 minutes. Introduce sliced mushrooms and chopped onion into the skillet; stir constantly until the vegetables become tender, roughly 4 minutes.

Add coconut aminos, Sriracha sauce, grated ginger, minced garlic, and vinegar to the skillet. Continue cooking, stirring occasionally, until most of the liquid has evaporated, around 10 minutes. Take the skillet off the heat and stir in sesame oil to enhance flavors. Season with salt and pepper to taste.

Divide the mixture into 8 equal portions, then place each portion onto a cabbage leaf. Top with sliced carrots and additional chopped onion for added flavor and texture.
