Ingredients
- 4 sweet potatoes, peeled and cubed
- 1/2 cup water
- 1 cup butter
- 2 cups white sugar

In a large cooking vessel, heat water over an intermediate temperature. Add potatoes to the pot and cover it with a layer of butter and sugar. Close the lid and bring the mixture to a rolling boil. Gradually decrease the heat to a low setting and let it gently simmer, without disturbing the mixture, until it reaches a thick and syrupy consistency, approximately 40 minutes. As the mixture cools, it will thicken further. Remove the pot from the heat source and serve the warm potato mixture.
