Yankee Pot Roast on the Stovetop
Ingredients
  • 1/4 cup olive oil
  • 1 (3 pound) beef round tip roast
  • flour for dredging
  • 3 medium onions, sliced
  • 3 large carrots, peeled and cut into small chunks
  • 3 large stalks celery, diced
  • 4 cloves garlic, minced
  • 3 whole allspice berries
  • salt and pepper to taste
  • 1 cup dry red wine
  • 2 (12 ounce) cans beef broth
  • 2 tablespoons cornstarch dissolved in a small amount of water
Instructions
1
Preheat the cooking vessel by warming oil in a substantial, iron-based pot over an intermediate temperature. Coat the roast in a fine powder, gently remove any surplus, and sear it evenly on all sides within the hot oil.
2
Combine diced onions, sliced carrots, chopped celery, minced garlic, and ground allspice in the pot; cook until they acquire a light golden hue. Introduce red wine into the mixture and bring it to a gentle boil before adding beef broth, which will then be reduced. Lower the heat to a minimal level, cover the pot, and cook until the meat becomes tender, requiring approximately 2 to 3 hours.
3
Transfer the meat to a plate and permit it to relax for 10 minutes. During this time, thicken the remaining liquid with a starch-based mixture. Slice the meat and serve it alongside the sauce.
