Ingredients
- 3 tablespoons bacon drippings
- 3 pounds pork roast
- 1/4 cup butter
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 tablespoon chopped fresh parsley
- 1 bay leaf
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 tablespoons tomato paste
- 1 1/2 tablespoons sugar
- 1 1/2 cups red wine
- 16 ounces fresh mushrooms, sliced

Preheat your oven to a moderate heat setting of 325 degrees Fahrenheit (or 165 degrees Celsius, if you prefer metric).

In a large skillet, heat the bacon drippings over high heat until they start to sizzle. Brown the roast on all sides, making sure it's nicely seared. Transfer the roast to a suitable casserole dish.

In the same skillet, melt the butter and sauté the garlic until fragrant. Add the sliced carrots to the skillet and continue cooking over medium heat.

Add a handful of fresh parsley, a bay leaf, salt, and pepper to the skillet. Stir in some tomato paste and sugar to give it a rich flavor. Pour in a glass of red wine, stirring everything together until well combined.

Place the roast back into the casserole dish and pour the wine-based sauce over it.

Bake the roast in your preheated oven for a period of 1 hour.

Remove the roast from the oven and arrange some sliced mushrooms around it. Return the roast to the oven, and bake for an additional 30 minutes.
