- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 cup crumbled feta cheese, or to taste
- 6 leaves fresh basil, chopped
- salt and ground black pepper to taste
- 3 tomatoes, chopped
- 2 large carrots, chopped
- 1 bunch asparagus, trimmed and chopped
- 1 bunch green onions
- 4 cloves garlic, minced

Boil a substantial container of salted water and bring it to a rolling boil; cook the rotini in the boiling water until it reaches your desired level of doneness, still retaining a slight firmness when bitten into, approximately 8 minutes.

Submerge the rotini in an ice bath to rapidly cool it down and stop the cooking process; make sure all the water is drained off completely.

While the rotini is cooking, combine apple cider vinegar and olive oil in a large bowl using an electric mixer until the mixture is smooth and well incorporated. Add feta cheese, basil, salt, and black pepper to the bowl and mix until they are fully blended together.

Combine the chopped tomatoes, carrots, asparagus, green onions, and garlic in a bowl with the feta vinaigrette; ensure that all the vegetables are evenly coated with the dressing.
