Combine the milk and lemon juice in a large bowl, allowing it to sit for about 5 minutes until it thickens and curdles.

Stir in the beaten egg and melted butter, blending them together until smooth. Set it aside for now.

In a separate bowl, whisk together the spelt flour, sugar, baking powder, baking soda, and salt.

Gently fold these dry ingredients into the milk mixture until just combined; the batter will still be a bit lumpy.

Heat a non-stick griddle over medium-high heat, making sure it's well-greased beforehand.
