- 2 (2 pound) slabs baby back pork ribs
- coarsely ground black pepper
- 1 tablespoon ground red chile pepper
- 2 1/4 tablespoons vegetable oil
- 1/2 cup minced onion
- 1 1/2 cups water
- 1/2 cup tomato paste
- 1/2 cup white vinegar
- 1/2 cup brown sugar
- 2 1/2 tablespoons honey
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dark molasses
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 teaspoons whiskey
- 1 1/4 teaspoons liquid smoke flavoring
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon coarsely ground black pepper

First, preheat your oven to 300 degrees F (150 degrees C). This will ensure that the ideal temperature is reached for cooking the ribs.

Next, cut each full rack of ribs in half to create 4 individual portions. This will make it easier to season and cook the ribs.

Then, sprinkle a generous amount of salt and black pepper over the meat, but be sure to use more black pepper than salt. Additionally, add 1 tablespoon of ground chile pepper for an extra kick.

Wrap each half rack in aluminum foil to create a steamy environment that will help tenderize the meat.

While the ribs are baking in the preheated oven, heat some oil in a medium saucepan over medium heat. Then, cook and stir the onion in hot oil for 5 minutes to bring out its natural sweetness.

After that, stir in a mixture of water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Add molasses, 2 teaspoons of salt, garlic powder, whisky, the remaining 1/2 tablespoon of ground chile pepper, liquid smoke, onion powder, paprika, and a pinch of black pepper.

Continue to bring the mixture to a boil, then reduce the heat and let it simmer uncovered until the sauce thickens, about 1 hour and 15 minutes. Remove from heat and set the sauce aside to be used later.

While the ribs are cooking in the oven, preheat an outdoor grill for high heat and lightly oil the grates to prevent sticking.

Remove the wrapped ribs from the oven and let them stand for 10 minutes, then carefully remove them from the foil.

Finally, cook the ribs on the preheated grill for 3 to 4 minutes on each side. Brush the sauce on ribs while grilling, just before serving them - adding sauce too early will burn the ribs.
