West Coast Chicken
Ingredients
  • 1 teaspoon olive oil
  • 4 skinless, boneless chicken breasts
  • 1/2 teaspoon onion powder
  • 1 pinch salt and ground black pepper to taste
  • 2 ripe tomatoes, sliced
  • 1 (8 ounce) package Monterey Jack cheese, cut into 10 slices
  • 2 avocados - peeled, pitted and sliced
Instructions
1
Firstly, preheat your oven to the desired temperature of 350 degrees Fahrenheit (or 175 degrees Celsius for those using metric measurements).
2
Next, heat a small amount of oil in a frying pan over medium heat and gently place the chicken breasts inside. Sprinkle some onion powder seasoning over the top of each breast to add flavor.
3
Continue cooking the chicken in the skillet for approximately 15 minutes, or until it reaches a nice golden brown color and is almost cooked through. At this point, add a pinch of salt and pepper to taste, allowing you to customize the flavor to your liking.
4
Once the chicken is cooked, carefully transfer it to a baking sheet and place one to two slices of tomato on top of each breast. Then, add two to three slices of cheese over the tomatoes.
5
Finally, place the baking sheet in the preheated oven and let it cook for 10 to 15 minutes, or until the cheese is melted and bubbly. Remove it from the oven, slice each breast into individual portions, and top with two to three slices of ripe avocado. Serve the chicken hot and enjoy!
