Ingredients
- 7 1/2 cups seedless watermelon, chopped into chunks, divided
- 1 1/2 cups white sugar
- 3 limes, juiced, or more to taste
- 4 tablespoons chamoy (Mexican chili fruit condiment), or more to taste
- 2 tablespoons chili-lime seasoning (such as TajinĀ®)

Blend 2 1/2 cups of watermelon in an electric blender until it reaches a smooth consistency. Pour the liquid into a saucepan and combine with sugar and lime juice. Heat it over high heat until boiling, then decrease the temperature and let it simmer for 5 minutes, or until all the sugar has dissolved. Allow the mixture to cool down and set aside for 20 minutes. Refrigerate the simple syrup in a sealed glass container.

Place the remaining watermelon chunks on a baking sheet covered with parchment paper and put it in the freezer. Let it freeze solid for about 4 hours.

Add a few frozen watermelon pieces to the bowl of a food processor at a time and blend until smooth. Gradually add 1/3 to 1/2 cup of the simple syrup mixture, followed by a few dashes of chamoy and chile-lime seasoning. Continue processing until the mixture reaches your desired consistency. Serve immediately or store it in an airtight container for later use.
