  • 3 tablespoons lemon juice
  • 1 dash salt
  • 1/4 cup cold water
  • 1 (.25 ounce) envelope unflavored gelatin
  • 1 cup chilled heavy cream

Combine the watermelon, sugar, lemon juice, and salt in a large mixing container; thoroughly mix until everything is well-coated. Cover the bowl with plastic film and refrigerate for 30 minutes to allow the flavors to meld together.

Blend the mixture in a blender until it's perfectly smooth; return the mixture to the bowl.

Pour the chilled water into a saucepan. Sprinkle the gelatin over the cold water; let it sit for 1 minute to allow the gelatin to soften. Place the saucepan over low heat; cook for 2 minutes, stirring occasionally. Stir the gelatin mixture into the blended watermelon mixture. Add the heavy cream; beat with an electric mixer at a medium speed until the mixture becomes light and airy.

Transfer the mixture into an ice cream maker and freeze according to the manufacturer's instructions until it reaches a "soft-serve" consistency. Transfer the ice cream to a one- or two-quart covered container; cover the top surface with plastic film and seal. For optimal results, ice cream should mature in the freezer for at least 2 hours or overnight.
