  • 1/3 cup bottled cherry juice
  • 1/4 teaspoon almond extract
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/4 cup all-purpose flour
  • 1 pastry for a double-crust 9-inch pie
  • 1 tablespoon butter, cut into small chunks

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

In a large mixing bowl, combine the cherries, cherry juice, almond extract, brown sugar, white sugar, and flour. Use a spoon or whisk to thoroughly mix the ingredients until the sugars have fully dissolved; let it sit for 15 minutes while you work on preparing your pastry dough.

Place a 9-inch pie dish in the oven and cover it with a layer of pastry crust. Fill the pie dish with the prepared cherry mixture, then sprinkle small pieces of butter over the top of the filling. Cover the filling with the remaining pastry crust and press the edges together to seal; use a sharp knife to create several small holes in the top crust for steam to escape.

Once you've prepared your pie, place it in the preheated oven and bake for 35 to 40 minutes, or until the cherry filling has thickened and is bubbling, and the pastry crust is golden brown. Remove your pie from the oven and let it cool before serving.
