Warm Pear and Gorgonzola Salad
Ingredients
  • 2 pears - peeled, cored and sliced
  • 1 cup port wine
  • 2 shallots, thinly sliced
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 6 cups assorted salad greens
  • 1 cup crumbled Gorgonzola cheese
  • 1 cup chopped walnuts, toasted

Preheat the oven's heating element to its highest setting. Place pear slices in a single layer on a baking tray. Bake until nicely caramelized, 3 to 5 minutes. Set aside to allow it to come down to room temperature.

Heat port wine in a saucepan over high heat. Bring the wine to its boiling point, and cook until it has reduced by half. Remove from heat and let it cool down. Transfer the cooled wine to a blender or food processor, and add minced shallots, garlic cloves, mustard powder, and apple cider vinegar. Blend until the mixture is smooth and free of lumps.

Distribute salad greens equally among four serving plates. Arrange some of the caramelized pear slices on top of each portion of greens. Sprinkle with crumbled Gorgonzola cheese. Drizzle the prepared dressing over each plate, then sprinkle with chopped walnuts.
