Warm German Potato Salad
Ingredients
  • 8 white potatoes, peeled and cut into cubes
  • 1 large onion, chopped
  • 2 teaspoons white sugar
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 cup cider vinegar, divided
  • 1 pinch ground black pepper
  • 1/4 cup vegetable oil
Instructions
1
Fill a large pot with potatoes and submerge them in salted water; heat the mixture until it reaches a rolling boil.
2
Reduce the heat to a low-medium setting and let the potatoes simmer for around 15 minutes, or until they're just tender; then drain them.
3
Place the cooked potatoes in a large bowl and combine them with diced onion. Mix well to distribute the ingredients evenly.
4
In a separate bowl, combine sugar, mustard, and salt. Stir until you achieve a smooth consistency; add just enough vinegar to form a thick paste, and season with black pepper.
5
In another bowl, whisk together the remaining vinegar and vegetable oil until they're fully incorporated. Slowly pour this mixture into the bowl with the paste, continuously whisking to merge the ingredients.
6
Pour the dressing over the potato and onion mixture. Cover the bowl with plastic wrap and let it sit for 5 to 10 minutes, allowing the salad to cool slightly before serving.
