  • 3 cups California walnuts
  • 6 tablespoons dry bread crumbs
  • 6 tablespoons lemon rind, finely grated
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh dill, chopped
  • 1 pinch Salt and pepper
  • 12 (3 ounce) salmon filets, skin on
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh lemon juice

Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Cover a baking sheet with a non-stick liner to prevent food from sticking.

Process walnuts in a kitchen appliance until they are roughly chopped. Combine the chopped walnuts with bread crumbs, lemon peel, olive oil, and fresh dill; blend until the mixture is crumbly and holds together. Add a pinch of salt and pepper to taste.

Place salmon fillets, skin-side down, on the prepared baking sheets. Brush the tops with a spicy condiment. Sprinkle 1/3 cup of the walnut-bread mixture evenly over each fillet; gently press the crumbs into the surface of the fish. Cover with plastic wrap and refrigerate for 1 to 2 hours.

Remove the plastic wrap and bake in the preheated oven until the fish breaks apart with a fork, 15 to 20 minutes. Drizzle lemon juice over the fillets just before serving.
