Walleye Patties with Dill Sauce
Ingredients
  • 3 pounds walleye fillets
  • salt and ground black pepper to taste
  • 1/2 cup dry white wine
  • 1 carrot, shredded
  • 1 red onion, diced
  • 1 stalk celery, diced
  • 4 cups panko bread crumbs
  • 2 cups mayonnaise
  • 1 tablespoon seafood seasoning (such as Old Bay®)
  • 1 teaspoon salt
  • 2 tablespoons oil for frying, or as needed
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 cup mayonnaise
Instructions
1
Preheat your oven to 375 degrees Fahrenheit (that's equivalent to 190 degrees Celsius).
2
Next, place the walleye fillets in a baking dish and pour in some wine - don't worry, it's just for flavor! Season the fish with a pinch of salt and some pepper to taste.
3
Then, pop the walleye fillets into a preheated oven and let them cook until they're tender and flake easily with a fork, approximately 20 minutes.
4
Once the fish is cooked, allow it to cool down and then break it into larger pieces. Set these aside for now.
5
In a separate bowl, combine some grated carrots, chopped red onion, diced celery, panko crumbs, 2 cups of mayonnaise, seafood seasoning, and a teaspoon of salt. Mix everything together until it's well combined.
6
Add the walleye pieces to this mixture and gently stir so you don't break them apart.
7
Shape the mixture into 12 patties - think of it as forming a uniform shape for your walleye cakes.
8
Heat some vegetable oil in a large skillet or griddle over medium-high heat.
9
Fry the patties until they're golden brown, taking about 3 to 5 minutes per side.
10
Meanwhile, whisk together some lemon juice and fresh dill in a bowl.
11
Add this mixture to 1 cup of mayonnaise and mix everything together.
12
Drizzle the sauce over your walleye cakes and serve them immediately.
