  • 2 teaspoons Dijon mustard
  • 4 slices whole-grain bread
  • 2 ounces shredded pepperjack cheese

Preheat your waffle iron according to its specific guidelines.

Merge mayonnaise and Dijon mustard in a bowl, then apply the mixture evenly to one side of each bread slice. Sprinkle pepper Jack cheese over the mayo-mustard layer on two slices, covering it with a second slice to create two complete sandwiches.

Place one sandwich in the waffle iron, being cautious not to press down completely. Allow the bread to begin softening due to heat before starting to carefully shut the waffle iron, approximately 2 minutes. Apply more force to the top section of the iron until it is fully closed, after a total of 3-4 minutes. Cook until browned, adding an additional 2-3 minutes. Proceed with the remaining sandwich.
