Ingredients
- 1 pound lean ground pork
- 1/4 cup panko bread crumbs
- 1 large shallot, minced
- 2 tablespoons lemongrass paste (such as Gourmet GardenĀ®)
- 1 tablespoon finely chopped mint
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 cloves garlic, crushed
- 1 teaspoon finely grated ginger root
- 1/4 teaspoon salt
- 1/4 cup water
- 3 tablespoons fish sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon white sugar, or more to taste
- 1 teaspoon rice vinegar
- 1 small Thai chile pepper, minced
- 1 small garlic clove, finely chopped

Begin by heating your oven to 375 degrees Fahrenheit (or 190 degrees Celsius). Next, take a sheet of parchment paper and line it along the edges of a baking tray to create a barrier between the meatballs and the pan. Set this aside for now.

In a large mixing bowl, combine ground pork, bread crumbs, minced shallot, lemongrass paste, chopped mint leaves, fish sauce, brown sugar, minced garlic, grated ginger root, and salt. Using a spoon or your hands, mix all the ingredients together until they form a cohesive mixture.

Use a cookie scoop to portion out small balls of the meat mixture, approximately 1 tablespoon each. Place these meatballs onto the prepared baking sheet, leaving enough space between them for even cooking.

Transfer the preheated oven to its highest temperature setting and bake the meatballs for 15 minutes, or until they are no longer pink in the center and cooked through.

While the meatballs are cooking, prepare the dipping sauce by combining water, fish sauce, freshly squeezed lime juice, sugar, Thai chile peppers, and minced garlic in a small bowl. Mix the ingredients together until they form a smooth consistency.

Move an oven rack about 6 inches away from the heat source and preheat the broiler to its highest setting.

Place the meatballs under the hot broiler for 2 minutes, just until they start to develop a golden-brown color and crispiness on top. Serve the meatballs hot with the prepared dipping sauce.
