- 2 tablespoons vegetable oil
- 1 red onion, thinly sliced
- 1 green bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 1 teaspoon minced garlic
- 1 yellow squash, halved and sliced into strips
- 1/2 cup salsa
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro

Preheat the oven by wrapping tortillas in aluminum foil and placing them inside. Set the oven temperature to 350 degrees F (175 degrees C) and bake for 15 minutes, or until the tortillas are thoroughly heated.

In a separate pan, heat oil over high heat in a 10-inch skillet. Add sliced onions, red and green peppers, and minced garlic to the pan; stir until they are well-coated with oil. Cover the pan, reduce the heat to medium, and cook for 5 minutes. Stir in cooked squash into the vegetable mixture.

Add a splash of salsa, a pinch of cumin, and a dash of salt to the pan. Cover it again, and continue cooking for another 5 minutes.

Now, take a warm tortilla and place an even layer of the vegetable mixture down its center. Sprinkle shredded cheese and chopped cilantro on top, then roll up the tortilla to serve.
