Ingredients
- 2 cups water
- 1 cup quinoa
- 1/4 cup extra-virgin olive oil
- 2 limes, juiced
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes, or more to taste
- 1 1/2 cups halved cherry tomatoes
- 1 (15 ounce) can black beans, drained and rinsed
- 5 green onions, finely chopped
- 1/4 cup chopped fresh cilantro
- salt and ground black pepper to taste

Boil water and quinoa in a saucepan until they reach a rolling boil. Then, decrease the heat to a low-medium setting, cover the saucepan with a lid, and let it cook for 10 to 15 minutes or until the quinoa is tender and all the water has been absorbed. Remove it from heat and let it cool down.

At the same time, mix together olive oil, lime juice, cumin, salt, and red pepper flakes in a small bowl using a whisk.

Combine the cooked quinoa with tomatoes, black beans, and green onions in a large bowl. Pour the dressing over the quinoa mixture and toss everything together until it's well coated. Add some chopped cilantro to the mix and season with salt and black pepper.

Serve the salad immediately, or refrigerate it for later use.
