Ingredients
- 1 (2 pound) flat iron steak
- 1/4 cup dry vermouth
- 1/4 cup sweet vermouth
- 2 1/2 tablespoons olive oil
- 1 tablespoon red pepper flakes
Instructions
1
Put the steak in a spacious container with a secure lid, or a shallow dish. Pour the dry vermouth and sweet vermouth into the container, mixing well to coat the steak evenly. Close the lid or cover the dish and refrigerate for 6 hours to allow the flavors to penetrate.
2
Heat a generous amount of oil in a substantial skillet over medium heat. Take the steak out of its container and discard the marinade liquid. Sprinkle red pepper flakes on both sides of the steak to add a touch of heat. Sear for 3 to 4 minutes per side, depending on your desired level of doneness. Allow the steak to rest for a few minutes before presenting it to your guests.
