Venison Meatloaf with Bacon and BBQ Sauce
Ingredients
  • 1 pound ground venison
  • 1/2 yellow onion, chopped
  • 1/4 cup barbecue sauce
  • 1 egg
  • 1 (4 ounce) packet saltine crackers, finely crushed
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon steak seasoning
  • 3 slices bacon
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.
2
Mix all the ingredients together - including venison, onion, barbecue sauce, egg, crushed crackers, brown sugar, Worcestershire sauce, sage, and steak seasoning - in a large bowl using your hands until they are well combined.
3
Place the mixture into a 3x7-inch loaf pan and cover it with layers of crispy bacon slices.
4
Place the meatloaf in the preheated oven and bake until it reaches an internal temperature of at least 160 degrees Fahrenheit, or 70 degrees Celsius, and the bacon is golden brown. This should take around 35 minutes.
5
Simultaneously, heat up the remaining barbecue sauce, brown sugar, and Worcestershire sauce in a small saucepan over medium heat.
6
Continue to stir the sauce constantly until it reaches a heated through state and has thickened slightly, taking about 5 minutes.
7
Once the meatloaf is cooked, pour the warm sauce over it and let it rest for 5 minutes before serving.
