Velvet Cheesecake Brownies
Ingredients
  • 1 cup white sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup unsweetened cocoa powder
  • 1 ounce red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1/4 teaspoon salt
  • 2 large eggs, slightly beaten
  • 3/4 cup all-purpose flour
  • 1 (8 ounce) package cream cheese at room temperature
  • 1/4 cup white sugar
  • 1 large egg
  • 1/4 teaspoon vanilla extract
Instructions
1
To begin, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Next, take a moment to grease an 8x8-inch baking pan to prevent any sticking issues during the cooking process.
2
To create the red velvet brownies, combine 1 cup of sugar and melted butter in a large mixing bowl. Then, gradually add cocoa powder, red food coloring, 1 teaspoon of vanilla extract, vinegar, and salt to the mixture one ingredient at a time. Ensure that each addition is thoroughly incorporated before proceeding with the next step to avoid any clumps forming in the mixture.
3
Once all the ingredients have been added, incorporate 2 eggs into the mixture until it is completely combined.
4
In a separate bowl, combine flour with the cocoa mixture just until they are fully incorporated; set aside 1/4 cup of this batter for later use.
5
Pour the remaining batter into the prepared baking dish, making sure to cover it evenly.
6
To create the cheesecake filling, use an electric mixer on a medium speed to beat cream cheese in a bowl until it becomes light and fluffy.
7
Add 1/4 cup of sugar, 1 egg, and 1/4 teaspoon of vanilla extract to the cream cheese mixture. Continue beating until all ingredients are well blended and only small lumps remain, taking around 3 to 4 minutes.
8
Spoon the cream cheese mixture into dollops over the red velvet batter in the pan. Using a knife or offset spatula, gently smooth out the tops of these dollops to be even with the surrounding batter. Be careful not to overmix at this stage.
9
Take the reserved 1/4 cup of batter and drizzle it over the dollops of cream cheese mixture.
10
Using a knife or skewer, drag through the batter and cream cheese mixture to create beautiful swirls in your dessert.
11
Finally, bake the entire mixture in a preheated oven for 30 to 35 minutes, or until the top is dry and the edges have started to pull away from the sides of the pan.
12
Once done, let it cool completely before cutting into bars and storing them covered in the refrigerator.
