- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 carrot, sliced
- 1 1/3 cups bean sprouts
- 2/3 cup fresh corn kernels
- 4 green onions, sliced
- 1 clove crushed garlic

Combine water and cornstarch in a small bowl, stirring until smooth. Add olive oil and soy sauce, mixing until well incorporated; reserve for later use.

Heat a generous amount of vegetable oil in a skillet or wok over medium-high heat. Sear sliced bell pepper, zucchini, and carrot in the hot oil for approximately 5 minutes. Introduce bean sprouts, corn kernels, green onions, and minced garlic into the pan.

Pour in the previously prepared soy sauce mixture. Continue to cook and stir until the vegetables are tender but retain a pleasant crunch, around 5 minutes.
