- 1 tablespoon chorizo sausage spice seasoning (such as Chimayo Chorizo Sausage Spice by Savory Spice Shop®)
- 1 (16 ounce) bag chopped fresh spinach
- 8 (10 inch) flour tortillas, warmed

Preheat a skillet over medium heat, allowing the oil to warm up and start sizzling.

Add sliced mushrooms and chopped onion to the skillet, cooking them until they begin to tenderize, approximately 5 minutes.

Next, add the cooked beans, diced tomatoes, and 2 tablespoons of reserved tomato juice to the skillet.

Season with chorizo sausage seasoning and stir constantly, allowing the flavors to meld together for about 4 minutes.

Introduce a handful of the vegetable mixture into the center of a warmed tortilla, then fold in the outer edges and roll inward towards the filling; continue rolling until the filling is completely enclosed.
