Vegetarian Tofu Lasagna

  • 1/2 (12 ounce) package uncooked lasagna noodles
  • 1 (12 ounce) package firm tofu, crumbled
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons milk
  • 1 cup spaghetti sauce
  • 1 tablespoon dried parsley
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese

Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.

Fill a large pot with water and add a moderate amount of salt to it. Place the pot over high heat and bring the water to its boiling point. Then, add your lasagna noodles to the pot and cook for 8-10 minutes, or until they are slightly resistant to the bite; remove them from the water.

In a separate, medium-sized bowl, whisk together your tofu, eggs, salt, pepper, nutmeg, milk, spaghetti sauce, parsley, and 1 cup of mozzarella cheese until you have a smooth mixture.

Place a layer of this sauce mixture in the bottom of a 9x13 inch baking dish.

Alternate layers of lasagna noodles and the sauce mixture, finishing with a layer of sauce on top.

Sprinkle the remaining 1 cup of mozzarella cheese and Parmesan cheese over your final layer.
