  • 1 cup chopped onions

  • 3 cups ricotta cheese
  • 2/3 cup grated Romano cheese
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon ground black pepper
  • 3 cups shredded mozzarella cheese
  • 3 cups tomato pasta sauce
  • 1 cup grated Parmesan cheese

Collect and prepare all necessary ingredients for the dish.

First, preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, fill a large container with salted water and bring it to a rolling boil. Add lasagna noodles and cook for 8-10 minutes, or until they reach the ideal level of doneness; drain them thoroughly.

While the noodles are cooking, heat a generous amount of olive oil in a skillet over medium-high heat. Add sliced mushrooms, chopped onions, and minced garlic to the pan and cook until the onions are tender; remove any excess liquid and let them cool down.

At the same time, bring a small amount of water to a boil in another pot; add fresh spinach leaves and let them simmer for 5 minutes. Drain the water, cool down slightly, and squeeze out any remaining liquid before finely chopping them.

In a separate bowl, combine ricotta cheese, shredded Romano cheese, an egg, salt, dried oregano, chopped basil, and pepper.

Add the cooled mushroom mixture to the ricotta-spinach mixture and blend it using an electric mixer on low speed for 1 minute.

Arrange 5 lasagna noodles in the bottom of a 9x13-inch baking dish. Spread one-third of the ricotta-spinach mixture over noodles, followed by 1 cup shredded mozzarella cheese and 1/3 cup grated Parmesan cheese.

Spread a generous amount of pasta sauce over the top layer. Repeat this process two more times, covering each layer with aluminum foil.

Finally, bake the dish in the preheated oven for 1 hour. Remove it from the oven after 15 minutes of cooling, and serve.
