Vegetarian Spicy Lasagna

  • 1 (16 ounce) package lasagna noodles
  • 2 teaspoons olive oil
  • 2/3 cup diced red bell pepper
  • 2/3 cup diced orange bell pepper
  • 2/3 cup diced yellow bell pepper
  • 2/3 cup diced green bell pepper
  • 1 small yellow onion, diced
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 1/2 cups water
  • 1 dash crushed red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • 1 (15 ounce) container ricotta cheese
  • 1 (8 ounce) package shredded mozzarella cheese
  • 4 eggs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano, crushed
  • 1/4 cup grated Parmesan cheese

Start by filling a large container with salted water and bringing it to the boiling point.

Cook lasagna pasta in this boiling water for 8 to 10 minutes, or until it reaches the perfect texture.

Remove the pasta from the water with a slotted spoon and transfer it to a bowl of cold water.

Next, heat some olive oil in a large cooking vessel over high heat and sauté sliced bell peppers and onions until the onions become translucent.

Add diced tomatoes, tomato paste, water, and a pinch of red pepper flakes to the saucepan. If you prefer a spicier sauce, feel free to add more red pepper flakes.

Simmer the vegetable mixture for 30 minutes, allowing all the flavors to meld together.

Preheat your oven to a hot temperature of 375 degrees F (190 degrees C).

In a separate bowl, combine grated Parmesan cheese, ricotta cheese, shredded mozzarella cheese, eggs, black pepper, and dried oregano.

Pour a small amount of the vegetable sauce into the bottom of a 9x13 inch baking dish, setting it aside for later use.

Reserve half a cup of the sauce and place three lasagna noodles lengthwise in the dish.

Layer some of the cheese mixture, followed by a layer of vegetable sauce, on top of the noodles. Repeat this process with the remaining ingredients, finishing by placing a layer of noodles on top and spreading the reserved sauce over it.

Finish the dish by sprinkling some grated Parmesan cheese on top, if desired.

Cover the dish with aluminum foil and bake for 40 minutes or until it's bubbly.

During the last 10 minutes of baking, remove the foil to allow the top layer to brown.
