  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 quart water, or more as needed
  • 1/2 cup chopped green onion tops
  • 1/2 cup dried parsley flakes
  • 3 bay leaves
  • 1 1/2 tablespoons salt, or more to taste
  • ground black pepper to taste

Start by submerging the peas in a large container and covering them with several inches of cool water; allow to sit for 8 hours or overnight. Drain the liquid.

Next, heat a generous amount of olive oil in a Dutch oven over medium heat. Sauté the onion and garlic in the hot oil until they become soft and fragrant, taking around 5 to 7 minutes.

Add the black-eyed peas, 1 quart of water, chopped green onions, fresh parsley, a few bay leaves, and a substantial amount of salt to taste; bring the mixture to a rolling boil.

Once boiling, reduce the heat and let it simmer until the peas are tender and most of the water has been absorbed, typically taking around 1 to 2 hours. If additional cooking time is required, add more water as needed.
