Ingredients
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1 medium onion, finely chopped
- 1 medium green bell pepper, finely chopped
- 1/2 (16 ounce) package frozen okra, thawed and sliced
- 8 ounces fresh mushrooms, sliced
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1/2 teaspoon file powder
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
Instructions
1
Preheat the saucepan over medium heat and add 1 tablespoon of oil. Introduce minced garlic, sliced onion, and chopped green bell pepper into the pan, then cook until they become tender.
2
Add sliced okra, button mushrooms, diced tomatoes with their juice, tomato paste, ground cumin powder, dried bay leaves, salt, and black pepper to the pan.
3
Stir occasionally as you cook this mixture for 40 minutes, allowing all the flavors to meld together.
4
In a separate pan, heat 2 tablespoons of oil over medium heat and constantly stir in flour.
5
Cook the mixture for 2 to 5 minutes, until it reaches a golden brown color and has developed a nutty aroma.
6
Gradually add the cooked roux to the okra mixture, stirring occasionally as you continue cooking for 5 to 10 minutes, until it reaches the desired consistency.
