Ingredients
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped zucchini
- 1/2 cup chopped yellow squash
- 1/2 cup chopped red onion
- 1/2 cup chopped mushrooms
- 1 tablespoon olive oil
- cooking spray
- 6 (9 inch) whole wheat tortillas
- 1 1/4 cups shredded reduced-fat sharp Cheddar cheese
Instructions
1
Preheat your large non-stick skillet over medium to high heat, allowing the surface to warm up.
2
Add sliced red pepper, zucchini, yellow squash, and onion to the skillet with olive oil, stirring occasionally until they reach a tender yet still crisp state, approximately 7 minutes.
3
Transfer the cooked vegetables to a serving dish or container for later use.
4
Spray cooking spray evenly across the same skillet, then place a single tortilla in it.
5
Spread 1/4 cup of shredded cheese uniformly over the tortilla, followed by a layer of the cooked vegetable mixture.
6
Sprinkle an additional 1/8 cup of shredded cheese on top of the vegetables, followed by another tortilla.
7
Cook the quesadilla over medium heat for 2-3 minutes on each side, or until it reaches a golden brown color.
8
Remove the cooked quesadilla from the skillet and place it on a cutting board to be cut into triangles.
9
Repeat the process with the remaining ingredients, and serve the quesadillas hot.
