- 1 teaspoon mustard seeds
- 1 green bell pepper, finely diced
- 1 clove garlic, minced
- 1 small onion, finely diced
- 1/4 cup frozen chopped spinach, thawed and drained
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 1 (16 ounce) can baked beans
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- ground black pepper to taste
- 2 tablespoons butter
- 3 tablespoons milk
- 1 pinch salt

Preheat your oven to a hot temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Fill a large pot with potatoes and cover them with salted water. Place the pot on high heat and bring to a boil, then switch to medium-low heat and let it simmer until the potatoes are tender. This should take around 20 minutes. Remove from heat and let them steam dry for a minute or two.

In the meantime, prepare a spice blend by mixing cumin seeds, ground coriander, ground turmeric, curry leaves, and sliced green chile in a bowl. Set it aside for later use.

Heat vegetable oil and mustard seeds in a large skillet over medium heat. Cover the pan and let it cook until the mustard seeds start popping, then reduce the heat to low. When the popping stops, quickly add the spice blend and cover the pan again; let it cook until the herbs make a hissing sound.

Mix in chopped green bell pepper, garlic, and onion. Cook and stir until the onion is softened and translucent, taking around 5 minutes.

Add spinach, corn, and peas to the pan. Stir until they are heated through. Then add baked beans and stir in some chopped cilantro.

Season the mixture with chili powder, a pinch of salt, and pepper to taste. Divide it evenly into two 9-inch round pie pans.

Mash cooked potatoes with butter, milk, and a pinch of salt in a bowl until smooth. Spread the mashed potatoes over the bean mixture using a fork to create small peaks that will become crispy during baking.

Bake the pies in the preheated oven until the potatoes are golden brown, taking around 20 to 25 minutes. Remove from heat and let it cool for a few minutes before serving.
