  • 2 stalks celery, roughly chopped
  • 2 tablespoons canola oil
  • 1/2 cup diced onion
  • 1 head cauliflower, roughly chopped
  • 1/2 cup shredded napa cabbage
  • 1/4 cup sliced bamboo shoots
  • 1/4 cup chopped fresh chives
  • 2 large eggs, beaten
  • 1 tablespoon soy sauce
  • 2 teaspoons rice wine vinegar
  • 1/4 teaspoon Sriracha sauce, or to taste

Prepare the ingredients by finely chopping the carrots and celery using a food processor's bowl attachment

Next, heat a generous amount of oil in a large 12-inch skillet over medium-high heat. Add the chopped onion and the previously prepared carrot-celery mixture; cook, stirring occasionally, until they become tender, taking around 5 to 7 minutes.

In the meantime, finely chop the cauliflower using a food processor's bowl attachment until it resembles rice or has a similar texture

Add the chopped cauliflower to the onion mixture and allow it to cook for an additional 5 minutes, or until it has started to brown slightly. Then, incorporate the chopped cabbage, bamboo shoots, and chives into the mixture and continue cooking until everything is heated through, approximately 3 to 5 minutes.

Subsequently, add beaten eggs to the mixture and stir vigorously while they cook, taking around 1 to 2 minutes.

Finally, add a dash of soy sauce, vinegar, and Sriracha to the mixture and serve it hot.
