Ingredients
- 12 lasagna noodles
- 2 tablespoons olive oil
- 2 heads fresh broccoli, chopped
- 2 carrots, thinly sliced
- 1 large onion, chopped
- 2 green bell peppers, chopped
- 2 small zucchini, sliced
- 3 cloves garlic, minced
- 1/2 cup all-purpose flour
- 3 cups milk
- 3/4 cup Parmesan cheese, divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (8 ounce) container small curd cottage cheese
- 24 ounces ricotta cheese
- 2 1/2 cups shredded mozzarella cheese, divided
Instructions
1
Preheat your oven to 375 degrees Fahrenheit, or 190 degrees Celsius.
2
Prepare a 9x13-inch casserole dish by spraying it with non-stick cooking spray.
3
Fill a large pot with water and add salt, then bring the mixture to a rolling boil.
4
Add lasagna noodles to the boiling water and cook for 8-10 minutes, or until they are tender but still slightly firm in the middle.
5
Drain the noodles and set them aside.
6
Heat a generous amount of oil in a large cast iron skillet over medium heat.
7
Once the oil is hot, add broccoli, carrots, onions, bell peppers, zucchini, and garlic to the skillet.
8
Saute these vegetables for 7 minutes, or until they are tender and lightly browned; set them aside.
9
In a separate saucepan, combine flour and milk.
10
Gradually whisk the ingredients together until they form a smooth, creamy mixture.
11
Bring this mixture to a boil over medium heat and cook for 5 minutes, or until it thickens and forms a sauce.
12
Stir in 1/2 cup of Parmesan cheese, salt, and pepper to taste.
13
Continue cooking the sauce for 1 minute, stirring constantly, before removing it from heat.
14
Stir in a handful of spinach to the saucepan and reserve 1/2 cup of this mixture for later use.
15
In a small bowl, combine cottage cheese and ricotta cheese.
16
Stir these cheeses together until they are well combined.
17
Spread a layer of the reserved spinach mixture in the bottom of your prepared casserole dish.
18
Layer the noodles, ricotta cheese mixture, sautéed vegetables, spinach mixture, and 2 cups of mozzarella cheese in the dish.
19
Finish with a layer of noodles on top, followed by the reserved spinach mixture, 1/2 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese.
20
Place the casserole dish in your preheated oven and bake for 35 minutes, or until it is lightly browned on top.
21
Remove the dish from the oven and let it cool for approximately 10 minutes before serving.
